To make the chilli sauce, put the ingredients in a blender with 75ml/2½fl oz water and blend to a smooth paste. Transfer to a saucepan, bring to the boil, then simmer for 5 minutes, stirring occasionally, until reduced slightly. Set aside to cool. Loaded fries are a delicious and indulgent treat. They have become a lot more popular in recent years. When I was growing up the only loaded fries I was aware of were cheesy chips! Instead, look to the chip world’s extremes. What you need as a base for your load is either thin french fries (squeezed between two fingers they form a convenient fanned scoop) or for heavier, wetter loads, glassy, crunchy, triple-cooked chips (they are more robust and have a slower rate of absorption). Better yet!! I have several delicious Chilli Recipes to choose from, so if you make one of these recipes and have plenty of chilli left over, these Chilli Cheese Fries are a must. Fries: I used frozen French fries, French fries are the long and thin type of chips you can buy or make yourself. If you are buying them frozen, any brand works well with this recipe.

I love to sprinkle chives on mine because they add a lovely fresh flavour which compliments the cheesy fries perfectly. You can add some extra flavour to these easy cheesy chips, try sprinkling hot fries with curry powder, smoked paprika or garlic powder. Speaking of challenges - I once set a challenge with a friend at the cinema on how many starbursts (opal fruits at the time) we could fit in our mouth at once (we was bored waiting for the movie to start), I won't tell you who lost, that's a whole other story.
