Freshness

Your brewer should maintain a water temperature between 195 to 205 degrees Fahrenheit for optimal extraction. Colder water will result in flat, under-extracted coffee, while water that is too hot will also cause a loss of quality in the taste of the coffee. (However, cold brewdoes not need any heat.)

Fermentation takes place in fermentation vessels which come in various forms, from enormous cylindroconical vessels, through open stone vessels, to wooden vats. [100] [101] [102] After the wort is cooled and aerated – usually with sterile air – yeast is added to it, and it begins to ferment. It is during this stage that sugars won from the malt are converted into alcohol and carbon dioxide, and the product can be called beer for the first time. The type of yeast used in beer brewing can have a significant impact on the flavor and aroma of the finished product. Different strains of yeast produce different flavors and aromas, ranging from fruity and floral to spicy and earthy. The Chemistry of Hops During the brewing process, hops are added at various stages to achieve the desired level of bitterness and aroma. Some brewers also use a technique known as dry hopping, which involves adding hops directly to the fermenting beer to enhance the aroma and flavor. Yeast metabolises the sugars extracted from grains, which produces alcohol and carbon dioxide, and thereby turns wort into beer. In addition to fermenting the beer, yeast influences the character and flavour. [45]
