You can use vegetarian and vegan ingredients such as cabbage, zucchini, tofu, squash, red and green bell peppers, eggplant, etc. The name “Mae Ploy” is derived from the main character from a series of stories written by Kukrit Pramoj. This was my first time making it so there is that going against me but I’m generally very confident when following recipes and what not so I’m at a loss. I doubled up the paste for Thai Kitchen, and had to add significantly more fish sauce than Mae Ploy to bring it up to the optimal seasoning level.

Bright green chiles and bits of makrut lime leaf make for a pretty sauce, but it lacks the pungency and complexity of more authentic versions.
