Madeleine molds are plenty on the market - that means you are bound to find one with just what you need. Chicago Metallic madeleine pan is made by one of the leaders-manufacturers that produce pans for home and commercial baking. Non-dairy milk - Use an unsweetened one if possible and definitely soy milk if you can, though any will work. I favour soy milk for baking as it has the highest protein content. I think we got to Madeleine #226 before he finally conceded that Batch #1 was indeed the best. Isn’t it always the way? 😂 Cornflour - cornflour (cornstarch) helps to give the Madeleines a light, soft texture.
