I personally think gluten free soy sauce tastes the same, but Asian food connoisseurs might disagree - you'll have to let me know if you think otherwise! Coeliac UK has recently (Jan 2021) updated its guidelines stating that it will no longer be listing products containing barley malt extract or barley malt vinegar unless they are labelled as gluten free. Only last week I went to a restaurant where the mayonnaise had a 'may contain traces of gluten' warning on it, must to my surprise.
