This Cambodian chilli sugar salt recipe makes one of Cambodia’s most beloved condiments. While people can easily make this at home, Cambodians love nothing more than spotting a vendor of sour fruits on their street or in a park, and hurrying over to choose a selection of fruit sprinkled with chilli salt or fruit doused in a fiery chilli sauce. Alternatively, you can work with a mortar. For this, the chilies must first be crushed with a sharp knife. Fresh chili peppers are always hotter than dried ones. Use intensely fragrant chilies. This is the aroma that is later found in the salt.

Store your salt & pepper seasoning in sealed spice jars. You can either wash out an old spice jar and once it is fully dry, fill it with your seasoning mix or treat yourself to these fancy spice jars. Just be sure that whatever container you use is airtight. Once dried, they will last forever. It will take a couple of weeks, but once completely dry and brittle you can take them down and store them in an open jar in the cupboard almost indefinitely. If left whole they keep their flavour and heat for a long time.

This Chinese Salt & Pepper Seasoning can be used to re-create your favourite Chinese restaurant & takeaway dishes or is also delicious sprinkled over meat, fish or tofu!
