I tried it in numerous tonics and it just works so well in them all – even full sugar tonics didn’t bring too much sweetness, such is the beautiful balance of the gin. The slight tweak to the Old Tom recipe from the London Dry and Navy gins is that there is more meadowsweet used for the Old Tom, and of course, added sweetness post-distillation. This is a juniper forward gin that offers up pronounced floral notes, along with juniper and very slight pine resin aromas on both the nose and the palate.Introducing Hernö, the world’s most awarded craft gin brand! Founded in 2011 by Jon Hillgren, Hernö was the first ever gin distillery in Sweden. Hillgren’s passion for the juniper predominant spirit took him all around the world in search of knowledge and inspiration, and finally culminated with him setting up a distillery in the small village of Dala, just outside Härnösand in the High Coast of Sweden. Old Tom style gins refers to the predominant style of gin before the emergence of the London Dry style in the early 19th century. In the 17th and 18th century, sugar was added to gin to cover defects in the distillation and make the gin smoother and more palatable. The Best of Category Awards in International Gin went to a diverse group of distillers that ranged from Australia to Canada and from Italy to Great Britain. The gin is distilled in a 1,000 litre Holstein still called Marit using a wheat-based grain neutral spirit. The juniper and coriander are macerated for 16 hours in warm spirit diluted to 50% ABV, allowing the essential oils to be gently released. The remaining six botanicals are added to the still before distillation begins.

Prohibition dealt Old Tom its final blow: Not only was there little incentive to bootleg the style, there was even less to resurrect it by the time Repeal rolled around.
