About this deal

I did go for a chocolate caramel style cheesecake filling. Of course I did use Cadburys so it was a dream, but you can use any chocolate brand really! Supermarket own, Lindt, Galaxy etc! I then used a slight smidge of caramel sauce to hint the flavour even more – but that is up to you. I decided from the off that after my no-bake Mini Egg cheesecake and my no-bake Creme Egg cheesecakerecipes that I NEEDED to do a caramel one. So, Cadburys caramel it is. You can buy Galaxy caramel eggs around Easter time, but I do love a Cadburys caramel egg quiiiiittteeee a lot so I went for them. I was pleasantly surprised with the gluten free easter egg options in Lidl. They actually had quite a lot in comparison to Aldi.

Some of my other cheesecakes that are based around something caramel like either use a caramel filling such as my Rolo one, or a combined flavour of chocolate and caramel but I wanted just chocolate for this to get that real hit of Cadburys goodness. A caramel cheesecake is a dream on its own, but a chocolate caramel one with Cadbury’s caramel chunks inside is INSANE. Instead of chopping up pieces of chocolate and folding it through the blondie batter, I added an entire layer of Galaxy Caramel to the centre and oh my God, it worked so amazingly well! I had never tried Galaxy chocolate in my life before, I always used to go for Milka, Lindt or Cadbury but I thought to give it a try and I do not regret that decision at all!! These caramel eggs have the perfect amount of chocolate and caramel. The bag is way too small to share and you shouldn't want to share it either. The gooey caramel part inside the chocolate egg is just heaven for me as a caramel fan. The price is quite high for the number of eggs it has inside, but I could say that it was definitely worth my money and I enjoyed every little piece that was inside this bag of Galaxy eggs!! I have, in the past, mixed my Blondies by hand. This is mainly because where I take my photographs and make my videos isn't in my kitchen but in my dining room next to a big window. My Galaxy Caramel Cheesecake is really popular with you guys, so I think you're going to LOVE these blondies. They are so simple to make and use really easy to get hold of ingredients. I'm so happy with how they turned out!

You can easily swap it for chopped up Cadburys caramel bars instead so you can make this recipe year round, or even use the caramel buttons. But to be honest, look how gooey and delicious the caramel eggs look. Slight sugar overload but YUMMYYYY. Add the butter and white chocolate to a mixing bowl and microwave in 30 second bursts until melted. Leave to cool for a few minutes. I know I say this a lot but this is honestly one of my favourite recipes to date. I really enjoy making blondies especially my Jammie Dodger and Biscoff ones but there's something extra special about the blondie recipe I'm sharing with you today. The cheesecake recipe is similar to my No Bake Millionaire Cheesecake . It has a biscuit base, Galaxy Caramel Chocolate Cheesecake and is decorated with double cream and Galaxy Carmel Mini Eggs. It is the perfect Easter dessert!

Amy's top tips

Gone have the days where the option was simply white, milk or dark chocolate. Now you can buy everything from salted caramel, honeycomb and popping candy, to marble, pink and dairy free eggs.
