In terms of its broad style, this is what is categorised as a London dry gin but the unique character and flavour come from our painstaking and original choice of botanicals.

They are very proud of their most recent creation, Weaver’s Dry Gin. It is a tribute to the linen industry, once the largest industry in Ireland. The creamy texture is down to an infusion of Irish flax seeds in the distillation process. Weaver’s Gin was named Best Irish Classic Gin at the 2019 World Gin Awards and was awarded a coveted gold medal at the prestigious San Francisco World Spirits Competition. Aiteal is distilled using fresh Irish juniper and Irish whey spirit, making it the only 100 per cent Irish gin. The word “aiteal” is the Irish for juniper. This is one of the few juniper-only gins produced worldwide. Using pot stills the distillery produces two casks of whiskey per day in Dingle, [11] where the mildly cool climate is reportedly favourable for whiskey production. [6] [9] Under Irish law, to be termed whiskey, a spirit is legally required to be matured for at least three years. [12] Therefore, Dingle Distillery only brought whiskey to market in late 2016. [7] The distillery also has a still for the production of gin and vodka. [4] [9] As of 2017, 100,000 bottles per year of Dingle gin are being sold. [10]

Where will the performances take place? Garnish Island gin is a very special gin made using 16 botanicals. It is inspired by the unique Italian gardens on Garnish Island in west Cork.
