In this cake recipe, you need 1 cup buttermilk; if you don’t have any buttermilk on hand, you can easily use 1 cup whole milk mixed with 1 Tablespoon lemon juice or white vinegar to make your own.

Guys. I tried to play it cool this year for Teddy’s 2nd birthday. Last year I tried to play it cool too with his doggy themed 1st birthday party– but you know how it goes when you’re trying to play it cool – inside you’re SO FRIGGING EXCITED and dying to plan the cutest party ever.To make vanilla buttercream, in a mixing bowl combine vegetable Crisco and soft butter. Beat on medium speed until the mixture is creamy. Remove the cake layers from the freezer and unwrap the cake layers. Next, use a serrated knife to cut off the dome of the cakes to make the layers flat and even. Use a round cutter to cut curved sections from two of the cupcakes. These will end up being placed on the head for ears. Save any scraps for use later. To start creating the bear shape, use a sharp knife to remove a small curved portion from the larger 6-inch cake layer. Save the curved cake scrap for use later. Then begin to pipe the tan buttercream around the fondant and continue piping small stars all over the cake.

Cut the reserved cake scraps in sections and use them to make a little bowtie. Pipe the sides using a Wilton #16 decorating tip while holding each piece between your fingers. Once the sides are piped, place the pieces in position and then continue piping until the rest of the cake is covered in blue buttercream.Get Creative!We have given you a guideline for making this adorable teddy bear cake, however, feel free to get creative and adapt this recipe to fit your specific events. The inspiration for the shape came when I was actually making another cake. I had baked a two-layer, six-inch cake and made some cupcakes with the extra batter from the recipe. I’m pretty thrilled with how this little teddy bear turned out. It’s the first time I’ve tried to make and decorate a three dimensional decorated cake like this, but I think he looks beary cute!
