About this deal

Biona Organic Mixed Nut Butter is milled from small batches of freshly roasted, certified organic nuts. I left the kitchen for a minute at a time, scraped the sides a bit, and noticed a distinct difference in the sound when the mix achieved “butter” consistency. This recipe is well-documented – it takes longer than I would have anticipated, and it’s interesting to watch the mixture go through various “states of matter” on its way from nuts to powder to butter. Allow the nuts and seeds to cool a little, cool enough to touch, and then add them to a food processor with an s-blade.

I’ve successfully made almond butter in my Cuisinart food processor and my Vitamix blender (affiliate links). You can activate the nuts instead by soaking and dehydrating them (this is the healthiest option), but it will be more difficult to get them to release their oils and achieve that creamy result (adding a bit of oil usually helps in this case). Yes let the nuts cool down BEFORE blending, and don’t add any oils, as i tried and it was really oily and runny……. It took longer than expected to get a creamy texture, but I suspect it’s just because I kept stopping to scrape the bowl down.

We’d recommend leaning more toward nuts that are creamy and fairly neutral in flavor such as almonds, cashews, walnuts, pecans, hazelnuts, and macadamia nuts. It takes around 10-12 minutes before it’s completely smooth and creamy in our machine but it can take up to 20 minutes in others.My youngest son Allan is unfortunately allergic to nuts but I often make several different seed butters. Making almond butter is easy, as long as you have a sturdy food processor or blender and some patience. The butter was fine on its own but my daughter added water to it and made the most fabulous cream which we had with a mixed fruit crumble.
