Instead of brandy, twists to the traditional recipes call for rum, ouzo or other alcoholic beverages. The product had such economic leverage that the island was often victim to conquerors and pirate invasions. You will pay very little for Metaxa in local bars and restaurants, with the 5 and 7 versions priced around the same as the most basic of whiskey and vodka imports. The 12 is a little more expensive of course, but there’s no better place to enjoy it as this drink is cheaper in Greece than it is in any other country. Distillation processes and ageing methodologies further elevate Greek brandy, sculpting its profile and depth. Traditional copper pot stills often find a preference, where the fermented grape juice is gently distilled, preserving the delicate aromas and capturing the essence of the grapes. The ageing process, often undertaken in French oak barrels, imbues the brandy with complexity, sophistication, and a harmonious balance between rich, dark notes and lighter, fragrant aromas. The word Kourabies (plural kourabiedes) originates from Qurabiya in Azerbaijani, Qurabiyə,in Arabic, Kurabiye, in Turkish and of course you will find this “cookie” under a similar name in many other countries as well.

Ouzo is the most popular consumed distilled spirit in the whole of Greece and was introduced to the country along with the refugees that came from Asia Minor. However, one of the known ingredients is rose water made from the May rose. Also known as Provence rose, it is a very aromatic hybrid rose developed by Dutch breeders sometime after the 17th century. May rose is also a component of Chanel No. 5 perfume.

The main difference between tsipouro and ouzo is that tsipouro has as its raw material the remnants of winemaking, ie, the skins of the grapes, which are fermented at low temperatures and give the aromas and special characteristics of the grapes. Metaxa 7 Stars takes it up a notch with a sweeter honeyed note, and the 12 Stars offer a light hint of citrus. Still, the Grande Fine infuses all the Stars in a stunning decanter that tastes incredible and makes a gorgeous gift. It’s really all down to preference and budget. If you have the money for it and you enjoy a more refined spirit, then Metaxa 12 will suit. If you’re not an experienced brandy drinker then you might be happy with 3, as is the case if you don’t want to spend much money. For me, Metaxa 5 is usually enough to enjoy the great taste without blowing the bank, while Metaxa 7 strikes the perfect balance between cost and taste for when I want to splash out a little. Tsipouro is believed to have originated in the 14th century in Mount Athos before spreading to the rest of Greece and Macedonia. Tsipouro can also have anise in it making it sweeter - more commonly found in the north of Greece. There is a fruit taste to it and notes of citrus, which suggests the use of something like orange blossom or orange oil. There is also a floral taste, imparted both by the rose petals and potentially something like jasmine.
