Not long ago, craving cool-climate flavours to match the weather, I bought rye bread, creme fraiche, a smoked mackerel and red onions for pickling. Immediately remove the syrup from the heat and, with the mixer on a slow speed, pour the hot sugar down the sides of the egg whites, whisking all the time.
