And I wouldn’t advise attempting any my recipes without them. One of the worst things you can do in any recipe is alter the quantities by mistake or on purpose. So when it comes to whisking air in the eggs and sugar by hand, make sure you give it lots of welly. I make the rest of the entire recipe with a simple silicone spatula.
